It is possible for the activation of an eSIM sometimes to get stuck on an iOS device. This can happen when you are in a region with limited reception, and the eSIM cannot find a network to connect to finish its installation. Don't panic! Your eSIM is fine and fully installed. Once it finds a network it can activate on, it will continue the process and automatically activate.
